Tasting Notes
This organic parmesan has been matured more than 12 months to allow its flavour to fully develop. It has a traditional ‘grana’ texture and a clean, sweet, lingering flavour. It is also made using non-animal rennet, which vegetarian can enjoy.
Inspiration
Inspired by the great Italian grana cheeses, the objective is to create an Australian parmesan that is up there with the best. Cheese maker Steve Interlandia learnt how to make traditional parmesan from his father John who was plying his craft as far back as 1958.
About Symons Organic
Servicing the Bendigo region since 1919, Symons’ Dairy was established by Albert Symons. In 1953 Albert’s son George took over, running the business for the next 40 years. In those days milk was delivered by horse and cart. Milk was ladled into your own billy can at the gate, at the grand cost of twopence a pint.
Symons’ Dairy has now been in the same family for three generations. For almost a century Bendigo consumers purchased the Symons Dairy brand with full trust and a sense of nostalgia. Now, third generation member Bruce is continuing this tradition of trust in food with Symons Organic Dairy.

You are able to pick-up your order during our operating days and hours ONLY at RIPE, Shop 41/42, Dairy Hall, Queen Victoria Market:
- Tuesday, Thursday & Friday: 7am-2pm
- Saturday: 7am-2pm
- Sunday: 9am-2pm
We do not provide this service on Monday & Wednesday.
After we have received your order and payment, we will contact you if we need to modify the delivery day/time period.
Orders received will be expedited the next business day. We only deliver Tuesday, Thursday and Friday after 3pm.
Our delivery person will place your order at your door, move at least 1.5m away and contact you. In the event that you are unable to receive your order, he will attempt to place it somewhere safe and inform you of said location. However, if there is not a safe place and you are liable to pay another delivery fee to get your order.
It's $15 delivery fee up to 10km or $25 between 11-20km. We dont deliver beyond 20km. Dont forget that our minimum delivery amount is $99 so you will need to order something else from our store to accompany this if you want delivery.
