Tasting Notes
C2 is the sort of cheese found throughout the mountains of France and northern Italy. A classic cooked curd cheese made in traditional wooden hoops. C2 matures for 6 - 12 months, during which time it develops a sweet aroma and a mildly nutty flavour. The rind is wiped every week to encourage the surface bacteria that provide this cheese with much of its robust integrity.

About Bruny Island Cheese (TAS)
Bruny Island Cheese Co. was started by Nick Haddow after he spent 10 years working with specialist cheese makers in many different countries around the world. He and his partner Leonie settled on Bruny Island in Southern Tasmania in 2001 to start making cheese for themselves. Nick is a traditionalist, who recognises that great cheese was made for centuries before modern technology played a role and believes passionately in the old way of making and maturing cheese. For him, cheese making is a pursuit of integrity and flavour.
Bruny Island Cheese Co. use cow’s milk to make its range of cheeses. The animals are farmed in an environmentally sustainable way with the focus of the farming practices on producing the best milk possible. They believe profoundly that the milk is what makes the cheese and therefore the good treatment of animals and their milk is paramount to them.

You are able to pick-up your order during our operating days and hours ONLY at RIPE, Shop 41/42, Dairy Hall, Queen Victoria Market:
- Tuesday, Thursday & Friday: 7am-2pm
- Saturday: 7am-2pm
- Sunday: 9am-2pm
We do not provide this service on Monday & Wednesday.
After we have received your order and payment, we will contact you if we need to modify the delivery day/time period.
Orders received will be expedited the next business day. We only deliver Tuesday, Thursday and Friday after 3pm.
Our delivery person will place your order at your door, move at least 1.5m away and contact you. In the event that you are unable to receive your order, he will attempt to place it somewhere safe and inform you of said location. However, if there is not a safe place and you are liable to pay another delivery fee to get your order.
It's $15 delivery fee up to 10km or $25 between 11-20km. We dont deliver beyond 20km. Dont forget that our minimum delivery amount is $99 so you will need to order something else from our store to accompany this if you want delivery.
